Tornatore’s Valdemone brut sparkling wine was born on the slopes of Mount Etna, on the northern slope in the town of Castiglione di Sicilia. The wine is made from the white vinification of Nerello Mascalese grapes, which, once in the winery, are whole cluster pressed. The must is fermented at a controlled temperature. Foaming takes place in steel tanks according to the Charmat method, where the wine ages for 4 months on the lees. Straw yellow in color and a fine and persistent perlage, the nose is expressed with flower and white fruit scents. The sip is dry and savory, with good persistence. Perfect as an aperitif, it pairs well with pizza.

Organoleptic Characteristics

Fine and elegant on the nose with a delicate and continuous perlage. Savory in the mouth, dry and fragrant with a fi nal closure of surprising drinkability.

Vinification

The bunches of grapes, hand-picked in boxes, are pressed whole once in the winery using a vertical hydraulic press. The must obtained from the first temperature-controlled fermentation naturally decants cold. This is followed by the second fermentation in an autoclave – charmat method – where the sparkling wine ages for four months in contact with the yeasts.
