Organoleptic Characteristics

Ruby red with faint violet hues. Rich and complex on the nose, very reminiscent of small brambly fruits, black cherry and a very delicate hint of sweet wood. The palate is firm, complex and extraordinarily persistent.

Vinification

Grapes harvested by hand in small crates arrive quickly at the winery where they undergo manual selection on a belt. Destemmed and not totally crushed, they are sent to truncated-conical wooden vats, where they macerate for about 10 to 12 days at a temperature of 22/25°C. Daily, for several times a day, manual punching-downs are performed to the macerating grapes using a pneumatic punching-down machine. Once fermentation is finished, the grapes are left to macerate for a few more days after which they are racked and pressed with a vertical press of the traditional type. The resulting wine rests, in 25 hl barrels, 18 months before being bottled.
