Tornatore’s Etna Bianco DOC impresses with drinkability and lively sip, characterized by vibrant freshness and a fine mineral trail. The grapes are harvested by hand in the municipality of Castiglione Sicilia, in the Pietrarizzo district, from which this Sicilian Bianco takes its name. It vinifies in 50 hl oak barrels at a controlled temperature and stays on the lees for about 5 months before bottling.

Organoleptic Characteristics

Intense straw yellow with faint reflections they ver- dognolous to the eye; pleasant hints of exotic fruit and especially grapefruit and white peach mark the nose of this wine which shows its true identity on the palate with a very pleasant savoriness and freshness complete with an extraordinary complexity and sweetness of taste.

Vinification

Grapes harvested manually in small cas- seven are brought quickly to the canti- na where they undergo manual selection on a belt. De-stemmed and lightly crushed they arrive at the press where they are softly pressed. The resulting must is cold clarified and placed to ferment at a temperature of 15/16°C in 50 hl oak barrels. Once fermentation is finished, the resulting wine rests on the lees fi ni for about five months.
